crockpot Sammies

Planting season is upon us and the wheels are turning like crazy. Late nights and early mornings are leaving all of us a little groggy, but I can hardly wait to see God's work play out as seeds begin to sprout. One struggle for us whether it be planting or harvest time is meals. What do I make? Do I need to bring supper to the field? How will it reheat for leftovers? Will our almost one year old be able to eat it? Is it easy? Can I prep it ahead of time? The list really goes on. If my husband had a choice he would prefer if we ate this meal once a week at a minimum. The meal is CROCKPOT SAMMIES. That's it, nothing fancy. Minimal ingredients, easy to prepare and cook and oh so TASTY!

Crockpot Sammies
  • 1 loaf of bread (I have used ciabatta, French boule, our favorite is a sun dried tomato basil with Mozzarella from a local bakery)
  • Ham
  • Turkey
  • Salami
  • Provolone
  • Banana Peppers - drained
  • 1 tsp Italian seasoning
Slice bread lengthwise. Layer provolone, turkey, salami, banana peppers, ham, and provolone. There is not much science here, just keep layering until you think it has enough. I usually pile on the meats and cheese so you have the PERFECT ingredient to bread ratio. Sprinkle top layer of provolone with Italian seasoning and top it with top half of the bread. Wrap in tinfoil.  In a Crockpot place a mini pie tin or 4 balls of crunched up tinfoil. Pour a 1/4 cup of water into Crockpot. Set wrapped sandwich loaf on top of the tin foil balls or pan. Cover and cook on low 2-4 hours. To serve, cut and ENJOY.

This is such a go to as we often have sandwich meats on hand, and I am known for having an extra loaf of bread in the freezer, for emergencies or for these ;) Even better you can swap out the types of meat and cheese to fit your family's taste buds!
